It’s a traditional cooked dish from Cortenais (central region of Corsica - Corté) contained offal (calf's ruffles). Calf Tripes Charles Antona are cooked in a simmered salsa with AOC wine and various vegetables. You can serve it with boiled potatoes with fresh parsley.
